Ingredients:
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
Whisk together and set aside.

3/4 cup softened butter
1 cup sugar
2 tsp vanilla extract
3 large eggs
1 cup buttermilk
1 cup toasted coconut

Preheat oven to 350 degrees. Grease a loaf pan.
In a large bowl, cream together butter and sugar till light and fluffy. Add vanilla then beat one egg at a time.
Add flour mixture in thirds, alternating with half cup of buttermilk. When all is combined, FOLD in the coconut. Pour into greased loaf pan and bake 60 minutes or until toothpick comes out clean. Cool, remove from pan and let cool completely on rack.
Icing:
1 cup powdered sugar
2 Tbs buttermilk
Whisk together and drizzle on cooled loaf. Sprinkle about 1/2 cup toasted coconut on top.
